Young Radish Kimchi is a beloved Korean kimchi made with tender young radish greens and a vibrant seasoning. Crisp, tangy, and refreshing, it adds a bright burst of flavor to any meal.

1. Trim and wash the young radish greens thoroughly.

2. Sprinkle salt evenly over the greens and let sit until softened, about 30–40 minutes. Rinse and drain well.

3. Add onion, apple, red chili peppers, cooked rice, and water to a blender. Blend until smooth

4. Transfer the blended mixture to a large bowl. Add garlic, ginger, Korean chili flakes, plum syrup, fish sauce, salted shrimp, sliced onion, and green onion. Mix well to make the kimchi seasoning.
